Kale is packed with antioxidants and vitamins, making it one of the healthiest foods you can eat. 

In a recent Martha Stewart article, registered dietitian Stephanie Mitchell Urich explains a few key benefits of kale. 

Urich is also a clinical instructor of nutrition and dietetics in the School of Health Sciences at Missouri State University.
